A full-bodied filter coffee with notes of plum, dried fruit, milk chocolate, lemon, cinnamon, cocoa, and caramel.
We prepare it as filter coffee, but it's also excellent as a modern espresso – straight or as a flat white. Enjoy your coffee!
Flavour profile:
Plum, dried fruit, green grape, milk chocolate, lemon, cinnamon, cocoa, and caramel. It's complex, with a very full body, smooth acidity and a sparkling mouthfeel.
Brewing advice for the Kalita Wave 155 coffee dripper:
- Coffee grounds: 15 g / 0,53 oz
- Water temp: 91 °C / 195,8 °F
- First pour: 30 ml / 1,06 oz, 30 sec
- Second pour: 150 ml / 5,29 oz, 10 sec
- Third pour: 50 ml / 1,76 oz, 100 sec
- Total brewing time: 2 min and 10 sec
- Water total: 230 ml
Tip:
- Use water with around 70 ppm.
- Grind coarser for a quicker brew.
- Pour in circular motion and maximum turbulence.
- Beans should degas 8 days from the roast date.

Finca Canaque, named after a native tree of the region, was originally founded in 1958 by Jorge Vides and is now in its third generation of family ownership.
Located in the mountains of La Libertad, Huehuetenango, Finca Canaque sits at an altitude of 1800 meters. Since 2016, María Vides has managed the farm, focusing on producing both natural and washed quality coffee.
